A classic Christmas menu with healthy ingredients, if possible vegetarian or vegan, that has something special, good to prepare and easy to cook. Is that even possible? Of course, and how well it works. The requirements and general preferences for this year’s Christmas menu were high. Accordingly, I thought about it and this year, by popular request, decided on a very classic menu. This year it’s vegetarian/vegan and in addition to that I made a few other demands on the menu. It is therefore not only classic and prepared from healthy ingredients, but also very easy to prepare and cook.(Meal Prep)

And don’t worry, your menu will still have that special something. To prepare a festive Christmas menu, you don’t have to look at long lists of ingredients and complicated recipes. Because who wants to stand in the kitchen for hours on Christmas morning or Christmas evening to prepare everything? Exactly.
As in the previous years, I made sure again this year that you can prepare the whole menu 1-2 days in advance.

By the way, when selecting the individual recipes this year I paid even more attention than in previous years to an uncomplicated preparation with few ingredients. For almost all dishes you usually don’t need more than 3-4 ingredients (without spices). This ensures an uncomplicated and quick preparation and additionally saves time and stress. And of course I used mainly seasonal ingredients for the menu. It tastes better and is richer in vitamins due to the shorter delivery and storage times and even cheaper at the end of the day, which can be an advantage at Christmas ;)

The starter: Beetroot soup with cashew cream
A Christmas menu does not have to be expensive
Beetroot is one of the cheapest winter vegetables, although it is one of the healthiest vegetables in this season. This is the reason why we start with exactly this soup. A healthy Christmas menu doesn’t have to be expensive! For many people the money at Christmas is a bit looser and of course you should treat yourself and your family. Nevertheless, we don’t have to spend more than necessary. It should be possible for every family to create a delicious and healthy Christmas menu. Besides, the recipe, like all my recipes, is good to prepare and quick and easy to cook. The same is true for the rest of the menu, but more about it follows…
Beetroot healthy winter food
As already mentioned, beetroot is super healthy. This is mainly due to its strong colour. This is due to the betacyanin it contains. It acts as an antioxidant, i.e. as a defence against cancer cells. In addition, beetroot is rich in vitamin C and B, potassium, protein and fibre. It therefore has an anti-inflammatory, blood-forming effect and helps us lose weight and perform well in sports. In other words, everything we need in winter.
Now I don’t want to keep you on the torture any longer, here comes the recipe for the Naturally Good Beetroot Christmas soup.

Beetroot soup with cashew cream
Zutaten
- 4 approx. 600 g beetroot (fresh)
- 2 carrots
- 2 potatoes
- 1 onion
- 1 tsp lemon juice, freshly squeezed
- salt
- pepper
- 1 L water
- 2 tsp vegetable stock
- some cashew cream
- 1 EL olive oil
Ingredients Cashew cream, yields approx. 150 ml cream
- 50 g cashew nuts, soaked
- 100 ml water
Anleitung
- Peel beetroot, cut into slices and then cut into cubes. Peel the carrots and potatoes and chop them coarsely into cubes. Peel and finely dice the onions.
- Heat a pot and add olive oil and vegetables. Steam the vegetables for 2-3 minutes while stirring. Deglaze with water and stir in stock. Cover and simmer until the vegetables are well cooked.
- Puree the vegetables finely with a blender or hand blender and season with salt, pepper and lemon juice. Arrange everything in a soup plate and garnish with a teaspoon of cashew cream.
Preparation Cashew Cream
- Soak the nuts in water for 1-2 hours (or overnight). Rinse the cashew nuts and put them into the mixer with water.
